The Global Ukon GU-03 9 Inch Bread Knife is a lightweight Japanese stainless steel serrated knife with a razor-sharp edge and ambidextrous thumb rest, made in Japan from Global's exclusive Cromova 18 high-carbon stainless steel. At $74.48, down from a $169.95 compare-at price, this is the deal for home bakers and cooks who need clean slices through crusty and soft loaves alike.
Serrated edges like the GU-03's should be sharpened with a tapered ceramic or diamond sharpening rod, working each serration individually on the flat back side at the factory bevel angle. Avoid pulling flat across a standard whetstone in a way that dulls the serration points. Global's guidance for the Ukon range: sharpen at the existing edge angle, hone lightly, and never use a dishwasher — hand wash and dry to preserve the Cromova 18 edge. For GU-03 sharpening guidance, a ceramic serration rod matched to the scallop size is the recommended tool.
Global's exclusive Cromova 18 stainless steel holds a fine edge, resists staining, and is designed by legendary knife designer Komin Yamada with organic, nature-inspired shaping.
Hand wash only — not dishwasher safe. Keep out of reach of children; 18+ purchase. Pairs with Global Ukon chef knives and Global knife storage.
Compared to standard serrated bread knives, the GU-03 offers longer 22cm reach, thicker Ukon blade stock, and superior grip handles. Alternatives include shorter 8-inch serrated knives, but the extra blade length handles larger boules better.

No. Like all Global knives, the Ukon GU-03 is hand wash only to protect the Cromova 18 edge and handle finish.
The serrated blade also slices tomatoes and soft fruit and vegetables, cutting through skin without damaging the center.

My crusty loaves used to squish under every knife I tried. This one glides through with a few gentle strokes and leaves clean crumb. The thumb rest is surprisingly helpful for control.
Best bread knife I've owned, period.
Slices crusty baguettes and soft sandwich bread equally well. The Ukon handle feels more comfortable than the classic Global dimpled handles. Only wish it were an inch longer for wide boules.
It's a very good serrated knife, no doubt. Even with the EDGE10 discount it felt pricey, but quality Japanese steel does cost. Performance is excellent.
Bought this for bread but it's become my tomato knife as well. Razor serrations cut tomato skin without bruising the flesh. Made in Japan quality is obvious. My wife immediately asked for one for her kitchen.
I'm 71 and arthritis makes sawing through bread painful. This knife needs barely any pressure. The ambidextrous thumb rest gives me a confident grip. Genuinely improved my mornings.
Slice quality is great, but the Ukon handle is chunky and my small hands struggle with it. Might suit bigger grips better.
