The Global Ukon GUS-20 is a lightweight santoku, balanced for nimble, fast cutting. Shoppers searching for the Global GUS-20 weight should note it follows Global's signature one-piece lightweight build, ideal for cooks who prefer less wrist fatigue over heavy German-style knives.
Compared with classic Global G-series santokus, the Ukon line adds the hollow ground edge at a lower price point. Against heavier European santokus, the GUS-20 wins on lightness and edge retention of CROMOVA 18 steel.

The Ukon GUS-20 adds hollow ground indentations that reduce drag and prevent sticking, at a lower price than many standard Global santokus.
It follows Global's signature lightweight one-piece build — light, balanced, and easy to maneuver for extended prep sessions.
The hollow ground dimples genuinely work — thin potato and cucumber slices fall right off the blade instead of suctioning on. The 5-inch size is perfect for my smaller hands and smaller cutting board. Edge is razor sharp and it's held up well through two months of daily use. The Ukon line's black handle is comfortable and looks sharp too.
Sharp, light, and food doesn't stick. Only reason it's not 5 stars is that I wish it were an inch longer for bigger cutting jobs. For everyday veggie prep though, it's excellent.
My favorite knife for weeknight dinners. Slices onions with zero tears — well, fewer anyway.
Well made and very sharp, no doubt about it. I just underestimated how small a 5-inch blade is and reach for my chef's knife most of the time. If you need a compact santoku, this is a great choice.
I bought this for my wife who prefers santokus over chef's knives, and after using it myself I see why. The hollow grind makes such a difference with wet vegetables — nothing clings to the blade. It's lightweight enough that our teenage daughter uses it safely for her cooking class homework. The edge has stayed sharp with just a quick strop. Great knife at a great price.
I own several classic Global knives and wanted to try the Ukon handle design. Honestly, I might like it better — the black handle gives a more secure grip when my hands are greasy, and the blade performance is classic Global. Zucchini, onions, boneless chicken, all handled effortlessly. The seamless construction means cleanup takes seconds. Two thumbs up.
The blade is fantastic and the non-stick dimples really do reduce drag. Docking one star only because the handle took some getting used to compared to my old German knife. After a month it feels natural. Would buy again.
The knife is well made and sharp, but the short blade and light weight felt flimsy to me when cutting hard vegetables like sweet potatoes. I prefer more heft. Returned it, but quality itself seemed fine.
I'm an old-school cook who was skeptical of these modern Japanese knives. My son bought me this santoku and it has won me over completely. It's light enough that my wrists don't ache after prepping a big pot of soup, and the edge stays keen much longer than the German knives I've used for decades. The dimples really do keep onions from sticking. I've already told my other children I'd like one for each of them.
