Great chicken, heavy piece

The bird came out wonderfully — crispy skin all around and perfectly even. My only complaint is the weight. I'm not as strong as I used to be and moving a loaded 10-inch cast iron skillet into the oven takes some planning. Also the roaster takes a little practice to seat the bird properly. Results are worth it though.
