Why is my carbon steel pan rusting? Moisture left on the surface causes rust. Dry immediately and apply a thin oil layer. Surface rust scrubs off with oil and salt or steel wool, then re-season.
Is the black stuff coming off my pan safe? Yes — it's polymerized seasoning, not coating. It's food-safe and will smooth out with continued use.
Can it go in the dishwasher? No — dishwashing strips the seasoning. Hand wash only.
Compared with cast iron, this carbon steel pan heats faster and weighs less while searing just as hard. Against nonstick coatings, it lasts decades and tolerates metal tools and high heat. Matfer and de Buyer equivalents cost more for less seasoning convenience.
Save $55.85 off compare-at. Coupon EDGE10 adds 10% more, and orders over $45 ship free — this pan qualifies on its own.

It arrives pre-seasoned. Cook with a light oil coat, hand wash with hot water, dry immediately, and wipe with oil after each use to keep building the seasoning.
Standing moisture causes rust. Dry fully and oil after washing. Light surface rust scrubs away with oil and salt, then re-season the spot.
No — dishwashing strips the seasoning. Hand wash only, and the pan will last for decades.
Eggs slide around like it's a commercial for the pan. The factory seasoning was genuinely good out of the box, which is not always the case with carbon steel, and it's only gotten better with use. Heats fast, responds quickly when you adjust the burner, and it's light enough to toss vegetables one-handed. At half off with the EDGE10 coupon this was a fantastic deal. I'll never buy coated nonstick again.
Nice build quality and comfortable handle. It stuck a little on the first two cooks, but after a couple more seasoning rounds it's releasing eggs and pancakes beautifully. Just takes a little patience.
Perfect sear on steak. Pre-seasoning works.
I'm 58 and have cooked on cast iron my whole life, so I was curious how this carbon steel would compare. It's noticeably lighter than my old cast iron, heats up way faster, and the handle stays cooler longer. Fried chicken came out with the crispiest crust I've managed in years. Wish I'd switched decades ago.
Cooking performance is legitimately great once you learn its quirks. My issue is the pan smokes a bit on my induction cooktop at high heat and the handle gets warm faster than I expected. Works well at medium-high and below. Adjust your technique accordingly.
Maybe I got a bad batch, but the pre-seasoning was visibly uneven with bare metal spots on one side. It's fixable with a re-season at home, which I've started doing, but the whole point of buying pre-seasoned was to skip that step. The steel itself seems decent, hence two stars instead of one.
