I do a lot of pan-seared salmon and this thing is a revelation. The edge is thin enough to get under the skin without ruining the crust, and the slight flex gives you just enough give to feel what you're doing. It's balanced so well that flipping feels effortless. Cookie transfers, grilled cheese, hash browns — it handles everything. Cleaned up beautifully in the dishwasher too, no water spots on the satin finish.

For stovetop fish and pancakes it's genuinely excellent — thin, precise, well balanced. But I melted nothing yet warped the edge slightly leaving it near a hot grill grate. It's a kitchen tool, not a grill tool. Know what you're buying.

Maybe I just prefer stiffer turners, but this flexes more than I expected and I struggle to lift heavier items like a whole salmon fillet. Fine for eggs. Not the workhorse I hoped for at this price.
