And the CROMOVA 18 needs prompt drying or you'll see spots. Great knife for the disciplined; frustrating for the careless. Hence three stars.

The long 10-inch blade lets you draw-cut in one stroke like the sushi chefs do. At this sale price it's honestly a gift. My grandkids watched me slice a tuna block and were amazed.
Not quite the fit and finish of a $200 Japanese handmade yanagiba, but at a quarter of the price it doesn't need to be. Slices beautifully, holds its edge well with regular stropping. The Global handle design is polarizing but I like it.
