I've cooked on All-Clad for years and was skeptical of a $45 tri-ply Dutch oven. I shouldn't have been. The aluminum core delivers dead-even heating — my béchamel had zero scorching on medium and my short ribs braised identically to how they do in my much more expensive pot. Even heating is fantastic and it's oven safe for my braises. Stainless does need a bit of Bar Keepers Friend after tomato sauces to keep it bright, which is normal but worth knowing. Otherwise excellent.
Performance-wise there's nothing to fault — heats evenly, lid fits well, quality steel. But the empty pot is heavy and full of stew it's a genuine two-handed lift for me. If you have wrist issues, factor that in. Kept it because the cooking results are great.
