I do a lot of Southeast Asian cooking and this knife is perfect for the fine prep work — deveining shrimp, scoring squid, trimming jackfruit. The high-carbon steel takes a scary edge and the forged heel gives good knuckle clearance. My grandmother's old paring knife finally has a worthy successor. Highly recommend.
Bought it mainly for peeling potatoes and it's been great. The blade is stiff, which helps when you're working close to the skin. Washed it dozens of times with no rust spots. Wish I'd upgraded from my supermarket knife years ago.
Nice fit and finish, but I hit a small pit while pitting olives and the edge chipped. I know high-carbon steel is harder and can be brittle, but I expected more toughness for the price. It sharpens back up fine though.
