The damascus pattern is gorgeous and the padauk handle is unlike anything else in my knife drawer. It glides through chicken joints and around carcasses with zero effort. Limited edition well worth grabbing.
Asymmetric grind, stiff blade, VG-10 core — this is the real deal. I break down whole chickens weekly and this knife has halved my time. The pointed tip slips through cartilage cleanly.
Honestly shocked at this value. Edge retention after two months of weekly use is excellent, and the stiff blade is perfect for trimming silver skin too. Wish I'd bought two.
This is not an all-purpose knife and it doesn't pretend to be. For butchery and deboning it's superb — precise tip, stiff spine, beautiful finish. Just know it's single-bevel-ish, so the technique differs from western knives.
Fit and finish are fantastic and the padauk handle is comfortable even with wet hands. The blade is stiffer than my old boning knife, which took a couple of sessions to adapt to. Now I prefer it.
Bought this for my dad who does all our holiday butchering. He called me mid-trim just to say how good it was. Packaging is nice enough to gift as-is.
The steel is faultless — sharp, stable, gorgeous damascus. But the padauk handle has lightened from deep red to a warmer brown after a few washes. Still attractive, just not what I expected from a limited edition piece.

I wanted to love this. The finish is beautiful, but mine arrived with a noticeably uneven edge bevel — one side seemed far more aggressive than the other. Maybe a quality-control miss on my unit, but for the price of a limited edition knife I expected better consistency. Sending it back.
