The curved bird's beak profile hugs potatoes and apples perfectly. Peeling is faster and cleaner than with any straight paring knife I've owned.
If you do tourné work or lots of peeling, this is the tool. The truffle black handle looks premium and the full tang gives it surprising heft for its size. It's a niche knife, so casual cooks might not reach for it daily — but I do.
