Peeling fruits and vegetables, removing blemishes, garnish work, and precision trimming where a paring knife is too large.
The SAI-S04 adds the hammered non-stick Cordova 18 finish and the premium ergonomic SAI handle, at a deep sale price.
The hammered blade really does keep food from sticking. Peeling apples for pie went twice as fast as with my old knife. Sharp, light, comfortable — exactly what I hoped for.
At 2.5 inches it looks almost toy-sized, but the edge is razor sharp and the handle is surprisingly comfortable for detailed work. Great for shallots, garlic, and scoring tomatoes. Docked one star only because it's pricey for the size, even on sale.
Best detail knife I've owned.
I've been cooking seriously for about fifteen years and this is the peeler knife I didn't know I needed. The Cordova 18 hammered finish genuinely reduces drag — softer fruits like ripe pears don't cling to the blade. Balance point sits right at the front of the ergonomic handle so you can choke up and control the tip precisely. I've used it for duck breast scoring, shallot brunoise, and strawberry hulling with equal success. Hand wash only, obviously, but that's true of all my Globals and I don't mind.
No complaints about quality — it's razor sharp and beautifully made. But I find myself reaching for my regular paring knife most of the time. The 2.5-inch blade is really only for fine detail work. Know what you're buying.
I teach culinary classes and my little Global gets passed around more than anything else in my kit. Students are amazed how light it is and how the food slides off the hammered blade. It holds its edge through heavy use too. Bought it for garnish work and it has exceeded expectations.
Already had the SAI-S03R and got this to complete the set. Same lovely hammered finish and comfortable grip. It handles peeling around curves better than the straight paring knife, which is exactly what I wanted. Minor gripe: the sale price still stings a bit for such a small blade.
The knife itself is sharp and well made, but the lightweight ergonomic handle is too slim for my larger hands. It cramps my fingers after a few minutes. Works well, just not comfortable for me personally.
I bought this during a sale two years ago and use it almost daily. Still scary sharp after a few strokes on a ceramic rod. No chips, no rust, the hammered pattern still looks brand new. If you do a lot of vegetable prep this tiny knife earns its place on the block.
