This knife glides through tomatoes and delicate fish like nothing I've ever owned. The hammered finish really does keep food from sticking. Worth every penny even at full price, and the sale made it a steal.
Beautiful knife, incredibly sharp.
I process a lot of chicken and pork at home, and this blade does the job beautifully. The flexibility is just right for getting around bones without feeling floppy. My only small complaint is that I wish the handle had a bit more grip when wet. Still, the edge retention after two months of weekly use has been excellent.
Been cooking seriously for about 20 years and finally treated myself. The Cordova 18 steel holds an edge way longer than the German knife it replaced. Dot pattern handle looks stunning and feels balanced in hand. It's a bit pricey normally so grab it on sale if you can.
After 50 years in the kitchen I know a good knife when I hold one. This Global is light as a feather and cuts through ripe pears and cooked roasts with barely any pressure. My old wrists appreciate it very much. The non-stick blade means thin cucumber slices actually come off the blade instead of clinging. A lovely gift from thoughtful children.
No complaints about sharpness or the finish — it's genuinely excellent at slicing. Just a heads up that 'flexible' means flexible. If you want a stiffer blade for firmer vegetables, this may not be the one. For its intended purpose though, it performs well.
Quality is clearly high but the blade flexed more than I expected and I ended up returning it for a stiffer knife.
