I cook vegetarian most nights and these two knives handle everything — the 7-inch for bigger jobs like cabbage and squash, the 5.5-inch for detail work on shallots and mushrooms. The Granton edge really does keep slices from sticking. Sharpest knives I've owned, period.
Both knives are wonderfully nimble for peeling, trimming, and julienning. Took a small nick peeling a butternut squash once — my fault, too much force — but the edge took a quick touch-up and came back fine.
Perfect for garden veggies. Very happy.
These are excellent at what they do — the food-release grooves work as advertised on wet vegetables. But it's a lot of money for two vegetable knives if your chef's knife already handles most prep. Great supplement, questionable necessity. The sale price made it easier to justify.
My wife and I grow most of our own vegetables and I process bushels every summer. These two Globals have survived tomatoes, zucchini, beets, and a mountain of green beans with barely a touch-up. The smaller GS-39 fits my wife's hands perfectly and she's claimed it as her own. Both clean up without staining even after acidic tomatoes. This is what quality steel feels like.
The two sizes complement each other well and cover almost everything I do at the board. I'd have liked a sheath or blade guards included for drawer storage, hence four stars.
Meal prep Sundays involve a lot of vegetables and these knives cut my prep time noticeably. Onion dices are clean without the cells crushing, so they actually taste sweeter in my opinion. The handles stay comfortable even through an hour of continuous chopping.
I know Globals are lightweight knives, but these feel almost insubstantial and I don't get the confident cut I want on harder root vegetables. Quality is clearly there, just not for my style. Passing them to my daughter who prefers lighter knives.
Used them daily for about six weeks. Edges still bite into tomato skins with no pressure. The 7-inch has become my go-to even beyond vegetables — cheese, citrus, herbs.
