I bought this partly as a collector and partly out of curiosity about the kiritsuke profile. It's turned into my go-to for garnish work, filleting fish, and precision slices. The anniversary etching is tasteful and the edge out of the box was scary sharp. At this sale price, no brainer.
Beautiful knife. Razor sharp. Love it.
The 6-inch size is more nimble than a full kiritsuke and the K-tip lets you do detail cuts a standard chef's knife can't. Slicing ripe tomatoes without crushing them feels like a party trick. Very happy with this limited edition.
Build quality and edge retention are classic Global — excellent. The kiritsuke profile does take some adjustment if you're used to a curved belly for rocking cuts; it's more of a push-cut blade. Once I adapted, I loved it. One star off only because it's a specialized shape, not a flaw.
This anniversary edition at under $35 felt like a mistake when I ordered it. It arrived beautifully finished, ice-tempered steel with a mirror edge. Immediately ordered a second for my best friend who cooks. Neither of us has put them down since.
No complaints about sharpness or fit and finish. But at 6 inches, this is more of a petty/utility knife in kiritsuke clothing than a true multi-purpose kiritsuke. Fine for garnish and small fish, but I still need my gyuto for bigger jobs. Know the size before buying.
I'm in my sixties and heavy knives wear on my wrist. This one is so light and well balanced I can do a whole tray of canapés without fatigue. It cleans up beautifully and the steel shows no staining after months of use. Delighted with the purchase.
Three months of near-daily use and one stropping session — still shaving-arm sharp. The ice tempering seems to genuinely help toughness too; no chips despite some careless contact with my ceramic board. Very impressed.
Disappointed. The tip on mine arrived with a slight bend and the etching had a faint smudge near the heel. Functionally it still cuts, but for a limited anniversary edition I expected flawless presentation. Return process was easy at least.
I own knives costing four times this and I keep reaching for the little anniversary kiritsuke. It fillets, it garnishes, it slices protein thin for shabu. Light as a feather, sharp as a scalpel. Grab it while the discount lasts.
