Carbon steel is exactly the right material for high-heat griddling and this one performs beautifully on my outdoor burner. You do have to keep it dry and lightly oiled or it rusts overnight, which isn't a flaw, just a fact of carbon steel. Cooking performance is excellent once it's broken in.
The cooking results are great, no complaints there. But at 15 inches of carbon steel this thing is genuinely heavy, and handling it full of food requires two hands and some planning. Fine if you have the strength and storage space; I'd probably buy a smaller size if I could do it over.
Out of the box mine had surface rust in a few patches around the rim. Scrubbed it off and seasoned it twice, and it cooks fine now, but the QC experience left a bad taste. Works okay, just know you might need to refurbish it before first use.
