I have the lidless version too, and this one gets more use because of the glass lid. Simmering, braising, steaming vegetables, all easier with a proper lid. Same superb ProCoat non stick underneath.
Great pan and the lid fits perfectly.
Cooking performance is top notch, eggs and fish release effortlessly, and the 5-ply base is dead flat on my induction cooktop. The lid knob heats up more than I'd like, minor annoyance.
You can tell this was made in Italy the moment you handle it. Everything is tight, balanced, and beautifully finished. The ProCoat surface has survived three months of daily cooking without a hint of degradation. Paella, risotto, chicken thighs, all perfect.
No complaints about quality, it heats evenly and nothing sticks. But for family-sized meals, 3.5 quarts is tight. Size up if you cook for more than three people.
Loved the first one so much I ordered a second for my daughter's apartment. Daily use, still flawless. The lid seals well and traps steam for perfect rice and quinoa.
This pan handles 90% of my weeknight cooking. Heats fast, releases clean, and looks good hanging on the rack. Hand wash recommended and I stick to it.
The pan itself cooks nicely, I'll give it that. But my lid rocks slightly and doesn't sit flush, letting steam escape. For the price I expected better fit and finish. Contacted support, waiting to hear back.
Compared to the ceramic pan this replaced, there's no contest. The ProCoat is still slippery after heavy use and the stainless construction means no wobbling or warping. One-pan dinners have never been easier.
Downsized my kitchen and needed one great do-it-all pan. This is it. Sauté, sear, simmer, all handled well.
I cooked professionally for 30 years and I'm picky about pans. This one earns its spot. Even heating, excellent release, comfortable handle, and a lid that actually traps moisture. My frittatas come out golden every time.
The 5-ply construction means it's substantial. Great for even cooking, but if you have limited grip strength, lifting this full of food takes two hands. Performance is otherwise excellent.
