Followed the seasoning instructions carefully — washed, dried, oiled, heated until smoking, repeated three times — and my first dosa released cleanly. By the fifth one, the surface was golden and the dosas were lacy and crisp around the edges exactly like at my grandmother's. The flat surface heats evenly across the whole width, no hot spots near the center. The short lip makes it easy to lift and flip with a spatula without food sliding off.
